small watermelon, cubed into skewer size chunks
mozzarella balls
fresh mint leaves
balsamic vinegar reduction (optional)
skewers

Directions:
Directions:
This is your basic basil/tomato/mozzarella skewer using watermelon instead of tomato, and mint instead of basil. This could even be used as a dessert alternative.

Onto each skewer, spear equal numbers of alternating mozzarella balls with watermelon chunks, depending on the length of your skewer, dividing each chunk with a mint leaf. When serving, drizzle with the balsamic glaze, if desired.

Variations::
Use pepper jack cheese sticks, cut into chunks, instead of mozzarella balls.
Trade the mint leaf for a basil leaf.
Drizzle with pesto instead of balsamic glaze.
Make a mint pesto and drizzle with that.
