Crust:

1 C. butter - softened
˝ C. sugar
2 C. flour


Filling:

4 eggs
1 ˝ C. sugar
4 T. flour
2 lemons, juiced - best with 2/3 cups of lemon juice


Glaze:

˝ C. lemon juice
1 C. confectioners’ sugar – plus more as needed

Directions:
Directions:
Preheat oven to 350 degrees. In a medium bowl, blend together the crust ingredients and press into the bottom of a 9 x13 inch pan. Bake 15 to 20 minutes until firm and golden. Make the filling by whisking together the sugar and flour. Next whisk in the eggs and lemon juice. Pour batter over the baked crust and bake for 20 minutes. The bars will firm up as they cool. To make the glaze, pour the lemon juice into a bowl and gradually add the confectioners’ sugar. Whisk it together until it makes a thick glaze. You may need to add more than one cup of confectioners’ sugar. Once bars are cooled, add the glaze over the top and let it set up.
