Crust:

1 stick butter – softened
¼ C. confectioners’ sugar
1 C. flour

Filling:

1 C. sugar
2 T. flour
½ tsp baking powder
2 eggs
3 T. lemon juice
2 tsp. grated lemon rind

Directions:
Directions:
Cream the butter with the confectioners’ sugar for 2-3 minutes and until it is light and fluffy. Stir in the flour. Press the mixture evenly into an 8x8 baking dish. Bake at 350 degrees for 15 minutes. Remove the pan from the oven and let the crust cool slightly. Keep the oven turned on at the same temperature. Combine the sugar with the flour, baking powder, and eggs. Beat until smooth. Stir in the lemon juice and lemon rind. Pour the batter over the baked crust. Bake for an additional 25 minutes. Cool to room temperature before cutting into bars.
