4 eggs
2 C. sugar
1 ˝ C. vegetable oil
2 large jars of carrot baby food
2 C. flour
2 tsp. baking soda
1 tsp salt
2 tsp. cinnamon


Frosting:

8 oz. creamed cheese – softened
˝ C. butter – softened
˝ tsp. vanilla
3 ˝ C. confectioners’ sugar
1 C. chopped pecans

Directions:
Directions:
In a large bowl, beat eggs until foamy. Add sugar, vegetable oil, and carrots. Beat 2 minutes at medium speed. Add flour, baking soda, salt, and cinnamon. Beat 1 minute at low speed. Pour batter into a greased 15x10 inch jelly roll pan. Bake at 350 degrees for 30-40 minutes or until a toothpick inserted into the center of the cake comes out clean. Cool cake completely before frosting. In a small bowl, beat the cream cheese, butter, and vanilla until fluffy. Add confectioners’ sugar. Blend until smooth. Spread frosting over cooled cake. Store in the refrigerator.

I usually divide the frosting in half and only put the nuts in half of the frosting.
