4 eggs
2 C. sugar
1 C. vegetable oil
2 C. canned pumpkin (15 oz.)
2 C. flour
2 tsp. baking powder
1 tsp. baking soda
¾ tsp salt
2 tsp. cinnamon
Optional: 1 C. chopped nuts and/or 1 C. raisins


Frosting:

3 oz. creamed cheese – softened
1/3 C. butter – softened
1 T. milk
1 tsp. vanilla
2 C. confectioners’ sugar

Directions:
Directions:
In a large bowl, beat eggs until foamy. Add sugar, vegetable oil, and pumpkin. Beat 2 minutes at medium speed. Add flour, baking powder, baking soda, salt, and cinnamon. Beat 1 minute at low speed. Pour batter into a greased 15x10 inch jelly roll pan. Bake at 350 degrees for 25-30 minutes or until a toothpick inserted into the center of the cake comes out clean. Cool cake completely before frosting. In a small bowl, beat the cream cheese, butter, milk, and vanilla until fluffy. Add confectioners’ sugar. Blend until smooth. Spread frosting over cooled cake. Store in the refrigerator.
