2 ¼ C. flour
1 ½ tsp. pumpkin pie spice
1 tsp. baking powder
½ tsp. baking soda
½ tsp. salt
1 C. butter – softened
1 C. sugar
1 can -15 oz. pure pumpkin
2 large eggs
1 tsp. vanilla
2 C. chocolate chips
1 C. walnuts or pecans – chopped
1 C. dried cranberries


Glaze: (double if prefer more glaze)

1 C. confectioners’ sugar
1½ -2 T. milk
½ tsp. vanilla

Directions:
Directions:
Combine flour, pumpkin pie spice, baking powder, baking soda, and salt in a medium bowl and set aside. Beat butter and sugar in a large mixing bowl using an electric mixer until creamy. Beat in pumpkin, eggs, and vanilla. Gradually beat in the flour mixture. Stir in the chocolate chips, cranberries, and nuts by hand. Use a small cookie scoop and drop on a greased or non-stick cookie sheet. Bake at 350 degrees for 12-15 minutes or until the edges are lightly browned. Cool on a baking sheet for 2 minutes and then move to a cooling rack to cool completely. To make the glaze, beat the confectioners’ sugar, milk, and vanilla in a small bowl. Drizzle or spread on glaze.

This will make approximately 80 cookies. I have also used canned vanilla frosting instead of glaze and then top each cookie with a craisin.
