1 C. butter – softened
1 C. sugar
3 eggs
2 tsp. orange zest
¼ C. orange juice
1 tsp. vanilla
4 2/3 C. flour
2 tsp. baking powder


Filling:

apricot jam


Glaze:

¾ C. confectioners’ sugar
1 T. water

Directions:
Directions:
In a large mixing bowl, beat butter and sugar. Add eggs and beat again. Next, beat in the orange juice, orange zest, and vanilla. Mix together the flour and baking powder and mix into the creamed mixture. Divide dough into four balls. Flatten each ball into disks. Let dough chill for three hours or overnight in the refrigerator. Roll out each disk to 1/8 inch thick. Cut dough with a 3-inch circle cutter. Place one heaping teaspoon of apricot jam in each center. Shape into a triangle by folding in three sides and leaving the center open. Place on lightly greased cookie sheets. Bake at 350 degrees for 18-20 minutes. Once cooled, drizzle with glaze.
