1 C. softened butter
1 C. brown sugar
½ C. sugar
1 egg
1 T. vanilla
2 C. flour
1 tsp. baking soda
½ tsp. baking powder
½ tsp. salt
2 C. dried cranberries
1 ½ C. quick-cooking rolled oats
1 ½ C. pecan pieces

Directions:
Directions:
Beat butter at medium speed until creamy. Gradually add sugars and mix again on medium speed. Add egg and vanilla until well blended. In a separate bowl mix together the flour, baking soda, baking powder, and salt. Gradually add the flour mixture to the butter mixture and mix together. Stir in the cranberries, oats, and pecan pieces. Use a cookie scoop and drop onto a lightly greased cookie sheet two inches apart. Bake at 350 degrees for 8-10 minutes or until lightly browned. Cool on cookie sheet for two minutes and then transfer to a wire rack to cool completely.

This will make approximately 60 cookies. I found this recipe in a Southern Living magazine many years ago and it has become one of my favorite cookies!
