2 C. flour
2 tsp. baking powder
½ tsp. salt
½ tsp. nutmeg – plus extra to sprinkle on top of each frosted cookie
½ tsp. cinnamon
¾ C. unsalted butter – softened
½ C. sugar
½ C. brown sugar
2 egg yolks
1 tsp. vanilla
½ tsp. rum extract
½ C. eggnog


Frosting:

½ C. butter – softened
3-5 T. eggnog
½ tsp. rum extract
3 C. confectioners’ sugar

Preheat oven to 350 degrees. In a mixing bowl, whisk together flour, baking powder, salt, nutmeg, and cinnamon. In the bowl of an electric stand mixer, whip together the butter, sugar, and brown sugar until light and fluffy. Mix in egg yolks one at a time, blending until just combined after each yolk. Mix in vanilla, rum extract, and eggnog. Slowly add in the dry ingredient mixture and mix until just combined. Use a small cookie dough scoop and drop dough onto a pan lined with parchment paper or silicone mats. Space cookies two inches apart. Bake 9-10 minutes. Allow cookies to rest on the cookie sheet for several minutes before transferring to a wire rack. Cool completely then frost with the eggnog frosting. Sprinkle the top lightly with nutmeg.

Frosting:
Whip softened butter until light and fluffy. Add in the rum extract and 3 T. of eggnog. Gradually mix in the confectioners’ sugar. Add additional eggnog to reach desired consistency.

Add an extra 2 T. of flour to the cookie dough if you prefer a thicker cookie.
