Directions:Dough: In a bowl of your stand mixer fitted with paddle attachment mix together 2 cups flour, sugar, yeast and salt. Place water, milk and butter in a bowl and microwave in 25 second increments until temperature reaches between 120º-130º. Butter may not be completely melted, which is fine. Add this to flour mixture along with egg and mix on medium speed for 2 minutes. Add 2 more cups flour and mix on high speed 2 minutes. Turn mixer on low and add enough flour until it forms a ball. Lightly flour a clean surface and knead dough for 6-8 minutes, adding enough flour as necessary. You can use the mixer fitted with dough hook to knead dough for this step. Let dough rest for 10 minutes.
Filling: Place sugar and cinnamon in a bowl and mix together. Roll out dough into a 15x10 inch rectangle. Spread with butter and sprinkle with cinnamon sugar mixture. Roll up the dough and slice into 12 pieces. I use plain dental floss for this because it doesn't squish the dough. Place rolls in a greased pan and cover with a clean towel. Allow to rise 1 hour in a warm place, until double in size. Bake at 350º for 25-30 minutes, or until golden brown.
Icing: Mix ingredients until smooth. Spread on rolls and enjoy. |
