* ¾ cup sugar
* 2 cups flour
* ½ cup oats
* 1 ½ tsp cinnamon
* 2 tsp soda
* ½ tsp salt
* 3 eggs
* ½ cup coconut
* ½ cup pecans, chopped
* 1 cup zucchini, shredded
* 2 cups carrots, shredded
* ½ cup applesauce
* 1 small can crushed pineapple, drained
* ½ cup maple syrup
* ½ cup oil
* 1 tsp vanilla
* Optional: 1 scoop protein powder

Directions:

Stir together dry ingredients. Mix together remaining ingredients and add to dry ingredients. Pour in paper lined muffin pan. Bake 350º for 25 minutes.
