12 oz. dry noodles (rice, soba, or regular spaghetti)
1 red bell pepper
1 yellow bell pepper
2 c. shredded purple cabbage
2 c. shredded carrot
4 scallions, sliced
1 c. edamame, defrosted
1 batch peanut sauce
1/2 c. chopped cilantro for garnish
1/2 c. crushed peanuts, chopped (optional)

Peanut Sauce
3/4 c. peanut butter (I used chunky peanut butter and omitted the chopped peanuts.)
3 T. low sodium soy sauce
1-2 T. maple syrup or honey
1 T. toasted sesame oil (omit if you don't want any sesame flavor)
2 T. rice vinegar
1/2 c. warm water
1/2 tsp. ground ginger
2 cloves garlic, finely minced
1 T. lime juice
1/2 tsp. red pepper flakes

Cook noodles according to package instructions, rinse with cold water and place in a large serving bowl. Toss in vegetables. Pour peanut sauce over all and mix. Garnish with cilantro and peanuts.
