8 qts peeled and sliced apples
4½ cups sugar
2 tsp cinnamon
½ tsp nutmeg
1 tsp salt
9 cups water
1 cup cold water
1 cup cornstarch
2 tbs lemon juice

Directions:
Directions:
1. Fill 8 clean quart sized jars with chopped apples.
2. Mix sugar, cinnamon, nutmeg, salt and 9 cups water in a large pot. In a small bowl mix cornstarch and 1 cup water until blended then add to the large pot.
3. Bring mix to a boil, cook on medium heat until thick. Add lemon juice. Ladle hot syrup into each jar leaving ½" headspace. Boil in water bath canner for 20minues. Adjust time for higher altitude.

*You can also place in prepared pie shells, cook, cool and then freeze.

We like to make this mixture but saute the apples slightly first and then freeze in ziplock bags for making apple crisp or pies.
