1 cup quinoa
2 cups water
½ tsp salt
1 cup black beans, rinsed and drained
1 cup corn, drained
1 red pepper, diced
2 tbs lime juice
2 tbs cilantro, chopped
2 tsp chili powder

Directions:
Directions:
1. Rinse quinoa in strainer. Add quinoa, water and salt into large pot. Cook according to package instructions.
2. Remove from heat, transfer to large bowl and let cool for at least 30 minutes.
3. Once cool, add black beans, corn, red pepper, lime juice, cilantro and chili powder. Mix until blended. Add extra seasoning if needed.
