1 lb Larry's Catch Wild Atlantic Haddock, cut into 4 fillets
Salt and pepper, to taste
1/2 cup flour
1/2 cup cornmeal or breadcrumbs
1/2 tsp paprika
1/2 tsp garlic powder
1/4 cup olive oil

Garlic Butter Sauce:
4 tbsp butter
2 cloves garlic, minced
1 tbsp fresh parsley, chopped
Juice of 1/2 lemon

For Serving:
Lemon wedges
Steamed vegetables or a side of rice

Pat the haddock fillets dry with paper towels. Season both sides with a light sprinkle of salt and pepper to enhance their flavour.

In a shallow dish, mix the flour, cornmeal or breadcrumbs, paprika, and garlic powder. This combination creates a crispy, golden crust that complements the haddock's tender interior.

Dredge each haddock fillet in the flour mixture, pressing gently to ensure an even coating on both sides. Shake off any excess.

Heat the olive oil in a large skillet over medium-high heat until hot. Place the coated haddock fillets in the skillet, cooking for about 3-4 minutes on each side until golden brown and crispy. Adjust the heat as needed to avoid burning the coating.
Once cooked through, transfer the fillets to a plate lined with paper towels to absorb any excess grease.

In a small saucepan over medium heat, melt the butter. Add the minced garlic and cook for about 1 minute until fragrant.

Add the lemon juice and fresh parsley, stirring to combine. Allow the sauce to simmer for another 1-2 minutes, then remove from heat.

Drizzle the garlic butter sauce over the crispy haddock fillets. Serve with lemon wedges and your choice of steamed vegetables or rice.
