1 bunch chopped green onions – lightly sautéed
2 lbs. large curd cottage cheese
4 oz. Monterey Jack cheese
4 oz. Deluxe American cheese from Kraft or the deli (approximately 6 slices)
1 stick of butter (1/2 c.) (use a little less than the whole stick)
10 oz. pkg. frozen chopped spinach (thawed and drained, squeeze out water)
6 eggs
8 T. flour

Put cottage cheese in a large bowl.
Cut up cheeses and butter in small chunks and add to bowl.
Add drained spinach and sautéed green onions and stir.
Whisk eggs in a separate bowl, add flour to eggs and whisk again.
Pour egg mixture into the large bowl of cheeses.
Stir and pour into a greased 9x13 inch glass pan.
Bake 1 hour at 350° or until bubbly and brown. (check at 55 minute mark)
Cut into squares after it sets, about 10 minutes.
