Beets
2 cups vinegar
2 cups sugar
1 cup water off boiled beets
2 sticks cinnamon
12 whole cloves

Boil beets until fork tender. Pop of the skins and tails. Pack beets tightly in sterile pint jars.

In a separate saucepan, bring all syrup ingredients to a boil. Pour hot syrup over jarred beets leaving 1/4" headspace in jar.

Wipe jar rims with white vinegar. Place lids and rings to finger tight on jars. Hot water bath 10 minutes to seal jars.
