Peel 2 medium Vidalia or sweet onions, and cut a thin slice from the bottom and top of each one. Scoop out a 1-inch deep hole from the top of each onion. Place onions, top sides up, in a 2-quart microwave-safe dish with a glass lid. Add 1 teaspoon of beef bouillon granules, and then fill the top with butter. Put 2 teaspoons of beef granules in the bottom of the dish and 1 cup of water. Cover. Microwave, covered, on high for 10 minutes or until onions are tender. Garnish each with parsley. DO NOT use plastic wrap; it will melt. Be sure they are tender, because they are so sweet that way. Depending on the onions, it may take longer to cook.
