1 large can sliced and pitted olives
2 green bell peppers, chopped
1 red bell pepper, chopped
1 large red onion, diced (white is ok)
2 lbs. sharp cheddar cheese, grated (natural white is tastier)
1 lb. mushrooms, sliced
2 large fresh tomatoes, diced
10+ very large tortillas (flour or wheat)
2-3 cans of hot enchilada sauce

Directions:
Directions:
Preheat oven to 350º.
In a large bowl, mix all ingredients, except the tortillas and enchilada sauce. Put 1/10th or so into each of the tortillas and roll tightly. Place the enchiladas carefully, and seam side down, into a large rectangular baking dish. Gently pour the enchilada sauce over the enchiladas in the dish. Bake for 5 minutes to seal and brown a little, then cover with foil and bake for 25 more minutes.
