Boston Butt
1lb of lard
1 onion
1 orange
2 bay leaves
1 can of evaporated milk
2tsp oregano
1tsp cumin
1/2tsp pepper
1 Mexican Coke

Directions:
Directions:
1. Cut boston butt into big chucks, seasoning it liberally with salt.
2. In a Dutch oven, melt lard and then sear the pork until it’s brown on all sides.
3. Once it’s brown, add onion, orange (add juice first then peels), bay leaves, evaporated milk, oregano, cumin and pepper.
4. Let it cook on medium-low for 1.5 hours and then add in Mexican coke.
5. Continue cooking until the meat is tender, about 30min (depending on how hot you cook yours, cooking times can vary)
6. Once the meat is tender, remove the meat and place on cookie sheet and shred it. Add a few ladles of juice from the Dutch oven on top.
7. Place under the broiler to crisp up (this won’t take long so watch) and then it’s time to build tacos.
8. Warm corn tortillas, add carnitas, onions, cilantro, lime and salsa verde and enjoy
