3 packages frozen chopped broccoli (8-10 oz. size) thawed
1 can Campbell cream of mushroom soup
8 oz. package Velveeta cheese, cubed
8 oz. stuffing mix (the bag of just bread cubes)

(You can purchase 3 boxes of frozen chopped broccoli or 2 larger bags. It does not matter)

Butter a 3-quart casserole dish. Heat over to 350º. Add thawed broccoli to dish and heavily pat down. In a pot over medium heat, add cheese to soup and cook until melted. Pour cheese mixture over the broccoli. Mix stuffing according to package directions. Put on top of soup and cheese mixture. Bake covered for 35 minutes Remove lid and bake 15 minutes more.

(To make stuffing, adjust the recipe so you are making three cups of stuffing, not the whole bag). I just use water and butter to make the stuffing.
