3lbs Roma tomato’s
1 yellow onion
2 garlic heads
Fresh basil
16-32 oz Chicken stock
1/2 cup Heavy cream
Olive oil
Salt and pepper to taste

Directions:
Directions:
Slice off the ends and quarter tomatoes and place face up on foil lined baking sheet.
Cut onion into slivers and garlic heads in half and place face up on the sheet among the tomatoes.
Drizzle with olive oil and season with salt and pepper to taste.

Bake in oven at 425 for 45-60 minutes until tomatoes are tender.

Remove garlic heads and squeeze out the garlic cloves back in with tomatoes.
Then add tomatoes, onions, juices and several basil leaves to a blender to mix until no clumps remain.

(Can also add ingredients straight to pot and mix with immersion blender)

Pour mixture into pot and about half a carton of chicken stock and about 1/2 cup heavy cream and combine. Add salt and pepper as needed.

Heat on stove top on low heat till warmed to preference.

Serve with a grilled cheese sandwich and enjoy!
