Dressing:

1/4 cup Champagne vinegar
1 Tbsp Dijon mustard
1 Tbsp honey
1/2 sea salt
1 tea freshly ground pepper
3/4 cup walnut oil
Whisk first 5 ingredients and gradually whisk in the walnut oil.

Salad:

1 head butter or other lettuce, washed and dried.
2 ripe but not too ripe pears, peeled, cored and sliced.
2/3 cup blue or gorgonzola cheese
2/3 cup candied nuts or toasted walnuts

Directions:
Tear lettuce in bite size pieces and arrange on chilled plate .Place fans of pears on lettuce and then add crumbled blue cheese on top. Drizzle dressing generously over the salad and sprinkle with nuts.

This is a delicious salad. Feel free to make adjustments to amounts and the toppings.
It's very refreshing salad and great way to eat delicious pears.
