3 pounds bone-in pork shoulder roast
2 tsp. fine sea salt
2 tsp. ground cinnamon
2 tsp. garlic powder
6 slices bacon
¼ c. balsamic vinegar
1 T. fish sauce
1 yellow onion, sliced
2 T. maple syrup

Directions:
Directions:
Mix salt, cinnamon, and garlic together. Rub on all sides of pork shoulder.
Place pork in the instant pot insert.
Lay bacon on top of the pork.
Sprinkle balsamic and fish sauce over the bacon.
Lay onion slices on top.
Pressure cook on manual setting for 100 minutes.
Release pressure.
Transfer the roast, bacon, and onions to a rimmed cutting board or baking pan.
Use two forks to shred meat, bacon, and onion.
In a measuring cup, whisk ½ c. cooking liquid with maple syrup.
Pour over the pork and toss to coat.

You could use a slow cooker instead of instant pot. Cook in slow cooker on low for 7-9 hours or overnight.
