1 (No. 2-1/2 can) sweet potatoes, drained
1/2 c. orange juice
1/2 c. pecans, coarsely chopped (roasting them a bit first is best)
1/2 c. drained crushed pineapple
1/4 c. brown sugar
Miniature marshmallows (optional)

Directions:
Preheat oven to 350º. Roast chopped pecans while oven is preheating. Mash sweet potatoes; add pineapple, orange juice, sugar and nuts. Pour into a greased casserole. Bake for 40 minutes. Put marshmallows on the last 10 minutes to brown (otherwise they will melt down into the mixture).

A No. 2 ½ can is equivalent to a 1 lb. 13 oz. can, or 3-1/2 cups of sweet potatoes. You can use about three or four medium sweet potatoes for the 29-ounce can of yams called for in the recipe, but be sure to peel, cut, and cook the raw sweet potatoes before proceeding with the rest of the recipe.

My family is not a fan of marshmallows, so I make this without the marshmallows, but you can add as many as you’d like.
