2 frozen chicken breasts
2 medium sweet potatoes, peeled and cubed
4 cloves garlic, minced
¼ cup fresh cilantro, chopped
2 tablespoons olive oil
1 teaspoon smoked paprika
½ teaspoon ground cumin
Salt and black pepper to taste

Preheat oven to 425°F.

In a large bowl, toss sweet potatoes with 1 tablespoon olive oil, salt, pepper, smoked paprika, and cumin.

Spread the vegetables on a baking sheet in a single layer.

Place the frozen chicken breasts on the baking sheet, drizzle with remaining olive oil, and season with salt, pepper, and half the minced garlic.

Roast for 25-30 minutes, turning vegetables once halfway, until chicken reaches an internal temperature of 165°F and vegetables are tender.

Remove from oven, let chicken rest for 5 minutes, then slice or serve whole.

Sprinkle fresh cilantro and remaining garlic over the vegetables and chicken before serving.
