3-5 lb boneless chuck roast
1 tbsp olive oil
2 tsp salt
1 tsp dried thyme
½ c red wine
1 yellow onion, cut into wedges
1 small bag baby carrots
1½ lb baby potatoes
4 cloves garlic, minced
2 c beef broth

Directions:
Directions:
1) Add cleaned carrots and baby potatoes to the bottom of the crockpot.
2) Sprinkle 1 tsp of the salt on to the chuck roast and add to the crockpot with vegetables.
3) Add the onions dried thyme, red wine, garlic to the crockpot.
4) Cover and cook on low for 6 to 8 hours depending on the size of roast. The roast should pull apart easily when done.
5) To serve transfer the roast to a cutting board and gently pull apart. Serve with vegetables and the sauce from the crockpot.
