Any cold water “white” fish
Louisiana or Zatarains’s fish fry mix - 1 bag/ box
Regular corn meal
Tony’s Creole Seasoning
Mustard - regular yellow
Vegetable Oil
Tartar sauce

Directions:
Directions:
Wash/clean fish, pat dry and cut into chunks

Place the fish in bowl and lightly cover with yellow mustard.
Pat lightly with paper towels, but don’t remove all the mustard.

Place 1/2 bag or box of fish fry mix and add in equal amount of cornmeal.  
Add Tony’s Creole Seasoning - to taste

Place a few pieces of fish into the mixture and toss until well covered.  Remove and place on a platter until all pieces are coated.  
We usually lay them on a cookie sheet covered with paper towels so they don’t touch.  

Heat oil to 350-375.  I’d start at 375.  

Once you put the fish in you’ll want to maintain the heat between 350-375.  
You want to make sure there is enough oil to completely cover the fish.  
Do not overcrowd the fish.  You may need to cook in batches.  
Cook until fish is golden brown, usually 4-5 minutes.

Place on paper towels.  Serve with tartar sauce
