4 oz. cream cheese, room temp
1- 14 oz. can sweetened condensed milk
1 tsp vanilla extract
juice of ¼ lime
3 whole eggs
2 egg whites
pinch of salt
1½ c. sugar
1 c. water, approximately

Directions:
Preheat oven to 375º. In a medium bowl, combine the cream cheese, sweetened condensed milk, vanilla extract, lime juice, 3 eggs, 2 egg whites, and salt. Mix with an electric mixer until creamy. Coat six, 6 oz. custard cups with a thin layer of butter. In a hot pan, melt the sugar until it caramelizes. Put about ¼ inch of caramelized sugar in the bottoms of each of the custard cups. Let it cool. Pour the cream cheese/flan mixture into each cup, filling the cups about ¾ full (the mixture will rise when cooked). In a pan large enough to hold the custard cups, pour ½ inch of water. Put the cups in the pan and place in the oven for 1 hour. Let the flan cool, then loosen it with a knife around the edges of the custard cups. Pop them out, upside down, onto a plate. Garnish with fruit, if desired.
