2 1/2 cups sugar
1 1/2 c. white vinegar
2 whole cinnamon sticks
1 tbsp whole cloves
4 lb firm ripe mission figs

Directions:
Directions:
Place sugar in a 6 quart pot,
Stir in cinnamon sticks and cloves over medium heat.
Bring mixture, uncovered, to a boil
Continue boiling, stirring occasionally until reduced to 1 1/2 cups.
Meanwhile gently wash figs, leaving stems intact.
Add figs to vinegar solution. Cover. Reduce heat and simmer about 15 minutes.
Figs should hold their shape. Shake pan occasionally.
Avoid stirring because it will bust up fruit.

Prepare 4 pint size canning jars
With slotted spoon lift figs from boiling syrup and pack into jars.
ladle syrup into each jar, leaving 1/4 in. from rim.
Boil in canner.

Chuck and Marian Dockham lived in Grass Valley. For several years we would drive up the day after Thanksgiving, spending the night at their hand built. beautifully crafted cabin for "blues night" Friends would gather at their house, Marina Bogleman, played her old Martin D28, Chuck, also on guitar, bass player and piano player..I had my Gibson J50, Hank with his J200. We played old rural blues and jug band music

Many years later when I had moved to Auburn, I would drive up to Grass Valley to play old blues and folk music with Marina. We went over to Marian's house for lunch, one day and she gave us some of her spiced figs. Delicious!
