2 Cups Sugar
1 1/2 Cups Vegetable Oil
4 Eggs
2 1/4 Cup Flour
2 tsp Salt
2 tsp Baking Soda
2 tsp Cinnamon
4 Cups Grated Carrots
1 1/2 Cup Chopped or Crushed Nuts (English or Black Walnut)

Preheat oven to 300º
In a bowl, combine sugar, oil & eggs. Beat at medium speed for 2 minutes. In a separate bowl, sift dry ingredients together and add to the oil mixture. Beat at low speed for 1 minute and add grated carrots & nuts.

Spread in a greased & floured 13 x 9 1/2 inch pan. Bake for 1 hour or until cake is done.

Cool & Frost with Cream Cheese Frosting.
