2 and ¼ cups flour
1 cup sugar
1 tsp baking powder
½ tsp baking soda
2 eggs
2 egg whites
1 T almond or vanilla extract
¾ cup slivered almonds (optional)
6 ounces dried cranberries (craisins)

1. Combine dry ingredients in a medium mixing bowl
2. In a separate bowl whisk together whole eggs, egg whites and extract
3. Add to dry ingredients, mixind until just moist, using an electric mixer on medium speed

4 Add dried cranberries and almonds and mix thoroughly.

5. On a floured surface, dividw batter in half and pat each half into log, approximately 14 inches long and 1 and a half inches wide.
6. place on a cookie sheet and bake for 30 minutes or until firm (350 degrees)
7. Cool on a wire rack

8, Reduce oven to 300 degrees.
9. Ct biscotti into ½ inch slices
10. Stand upright on cookie sheet and bake an additional 20 minutes
11. Let cool and store in loosely covered container
