1 Tablespoon Oil
1 lbs Sausage (Italian or Andouille) work best
1 1/2 lbs Boneless skinless Chicken Breasts- cut into bite size peices, cooked
2 Tablespoons Flour
2 Tablespoons Butter
1 Tellow Onion chopped
4 Green Onions Chopped
4 Garlic Cloves minced
3 ribs of Celery chopped
1 green bell Pepper Chopped
1 1/2 teaspoon dried Basil
1 1/2 teaspoons Cajun Seasoning
1 teaspoon Salt
1/2 teaspoon black Pepper
1/4 teaspoon Cayenne pepper
1 can (14.5oz)
2 1/2 Chicken Broth
1 1/4 cup Rice

Directions:
Directions:
-In a small bowl combine, basil,cajun seasoning, salt,black pepper and cayenne. set aside.
-In a large pot add oil sausage and chicken until coated then add onion, garlic, celery, and bell peppers. saute for 3 mintues.
-Add Seasoning to pot and stir well. add broth and rice and cook until gently boiling. reduce heat and simmer for 20 minutes.
-Remove from heat and let sit for 10 minutes with lid still on. fluff with fork and serve.
