1/4c oil
2lbs white fish or shrimp
Onion cut 1/2inch slices
2T garlic minced
1can coconut milk
1T ginger minced
1T curry paste
2c broth
Juice of 1lime and 1 sliced
Cilantro and lime wedges for looks

Directions:
Directions:
Put oil in pan fry the fish remove browned fish drain on rack to keep it crispy. Add the onion garlic and ginger mix in fish sauce and curry paste stirring until it starts to thicken a bit add broth bring to a low boil after add the milk making sure it doesn't break add the fish back in the sauce once it gets warm taste to check the salt and pepper is on point. Make a full rice cooker of rice

You mite want more heat adding chilis is up to you . I'm a big chicken when it's hot peppers.
