15 ounces canned salmon, drained (remove bones if desired)
3 eggs, beaten
½ cup finely chopped green onion
½ cup finely diced celery
1½ cups crushed saltine crackers
1½ tsp. freshly squeezed lemon juice
¼ cup bell pepper (optional)
⅛ tsp. cayenne pepper (adjust to taste)
olive oil - enough to cover bottom and sides of the patty while frying

Directions:

1. Drain canned salmon and discard the liquid. Remove bones if desired.
2. Add eggs, chopped onion, diced celery, crushed saltines, lemon juice, and cayenne pepper. Mix well until combined.
3. Shape mixture into patties about ½ to ¾ inch thick and 4 inches in diameter.
4. Heat cooking oil in a large skillet over medium heat (about 325º)
5. Gently place patties into the hot oil using a spatula.
6. Fry for 5 minutes per side or until golden brown and crispy.
7. Remove and drain on paper towels. Serve hot and enjoy!
