2 lb. sweet potatoes (about 3 large), cut into ½ inch cubes
2 T. olive oil
¾ tsp. kosher salt

Preheat oven to 425°F. Chop up sweet potatoes into roughly half inch cubes and transfer into a large bowl. Add olive oil and salt, and toss to coat. Spread out on baking sheets and roast for 30 minutes. Depending on your oven, it might be good to flip potatoes halfway through.
