1/2 tablespoon of olive oil
1/2 cup yellow onion, finely chopped
1/2 cup bell pepper, finely chopped
2 pounds 80% lean ground beef
1 cup crushed Ritz crackers
2 eggs, whisked
1 cup sharp cheddar cheese,
1/2 cup milk
1 tsp salt
1/4 tsp black pepper

For the topping:
3/4 cup ketchup
2 tbsp brown sugar
1 tsp yellow mustard

Directions:
Directions:
Preheat oven to 350 degrees
Sauté the diced peppers and onions in a small pan with olive oil until soften, about 5 minutes. Set aside and let cool.
Combine the whisked eggs, crushed crackers, onions, peppers, cheese, milk, and salt and pepper in a large bowl.
Add ground beef and mix until just combined.
Form it in a loaf shape and place it into a loaf pan.
Bake 30 minutes.
Topping- Combine the topping ingredients while it is baking. Mix the ketchup, mustard and sugar.
Remove the meatloaf after 30 minutes and brush with the topping.
Bake for another 30-40 minutes or until a meat thermometer reaches 155 degrees.
Let is rest for 15 minutes in the loaf pan before serving.
