2 cups flour
3 tsp baking powder
1/2 cup sugar
1/2 tsp salt
1 tbsp lemon peel
1 cup milk
1/3 cup oil
1 egg slightly beaten
1-1 1/2 cups fresh blueberries

Glaze
2/3 cup powdered sugar
4 tsp lemon juice
1/4 tsp nutmeg

Directions:
Preheat oven to 375º. Combine dry ingredients and lemon peel. In separate bowl, combine other ingredients; add to dry mixture and stir until moistened. Bake for 15-18 minutes or until light golden. *Don’t over bake! While in the oven, mix the glaze ingredients. Brush warm muffins with glaze using a pastry brush.
