1 medium eggplant, peeled, salted (to remove bitterness)
2 red and/or green bell peppers, cut into 1/4 inch squares
1 lb. tomatoes (some ripe and some firm ones), cut into 1/4 inch cubes
2 lbs. zucchini, peeled and cut into 1/4 inch cubes
1 lb. Vidalia onions, sliced into rings
1 clove garlic
1 c. cold water
1/2 c. oil

Directions:
Directions:
Combine ingredients in a large pot over low heat. Cover and cook very gently for 1-1/2 hours.

Serve as a side dish.
