6 Artichokes (medium to large size)
1 ¼ cups seasoned bread crumbs
1 cup Parmesan Cheese
1 garlic clove minced
3 tablespoons fresh parsley finely chopped
1 teaspoon salt
1 lemon
6 tablespoons extra virgin olive oil (can use more later to drizzle on top of stuffed artichoke)
Water to place in bottom of pan, just enough to cover bottom of artichokes

1. Clean artichokes by removing stem on bottom, cut/pull off a few outer leaves and cut off tips of each leaf with a scissor to remove pokey part. Then use a spoon to spread out the center of the artichoke for stuffing filling.
2. Place cleaned artichoke in bowl with water and lemon juice to present leaves from turning brown,
3. Prepare stuffing by combining bread crumbs, parm cheese, garlic, parsley, salt and extra virgin olive oil.
4. Remove artichoke from lemon water and begin stuffing each artichoke by spooning stuffing mixture into center of artichoke and between each leaf.
5. Place stuffed artichokes in oven proof/stove top safe pan with a cover. Add enough water to bottom of pan to reach about 1/4 of bottom of artichoke. Place on stove top and cook covered for approximately 30 minutes to soften artichoke. Then remove from stove top and bake for 10 minutes to brown artichokes. You can make artichokes ahead and just leave the browning until the day you are ready to enjoy.
