4 medium Russet or Idaho potatoes
½ c. butter
½ c. heavy cream
¾ tsp. salt
½ tsp. ground white pepper
½ c. mined green onions
6 ½ oz. crab meat
½ c. shredded cheddar cheese

Directions:
Directions:
Bake potatoes at 400ºF for 1 hour. Halve lengthwise and scoop out potato; reserve skins. In large bowl, mash potatoes with butter, cream, salt, and pepper. Stir in onions and crab. Fill reserved skins with potato mixture. Sprinkle with cheese. Bake at 350ºF for 20-30 minutes.
Note: Another option is to lace the filling mixture in a shallow dish or casserole.
