4 Zucchini, Whole (small in size)
1 tsp. Kosher salt
1 tsp. Garlic powder
3 tbsp. Olive oil, divided
1 tbsp. Minced garlic
1 tsp. Oregano, dried
¼ tsp. Crushed red pepper (optional)
½ c. Parmesan cheese, grated
¾ c. Mozzarella cheese, shredded
½ c. Fresh basil, chopped

Pre-heat oven to 425º (220º C)
Line a baking sheet with parchment paper.

Gently rinse zucchini, pat dry, cut zucchini in halves lengthwise.
Score/ Grill flesh in a criss cross pattern.
Using 1 tbsp. of oil gently rub each zucchini half, then sprinkle salt, garlic powder over zucchini halves evenly. Seasonings should cover all eight halves.

Let sit for 15 minutes, towel blot any released liquid using paper towels.
Heat 1 tbsp. oil in a 12 inch skillet over medium high heat.

Place zucchini in the skillet cut side down; cook until brown about 4 to 5 minutes then turn to the skinned side, cook for 3 to 4 minutes.

Transfer to the lined baking sheet cut side up, pour remaining oil into skillet add garlic, oregano and red pepper (optional), cook until fragrant about 1 minute, scrape herb oil into a small bowl
Generously brush zucchini halves with herbed oil, bake for 2 minutes.

Sprinkle with parmesan and mozzarella cheese, bake until cheese melts around 2 to 3 minutes, garnish with fresh basil
