1 Piecrust

4 medium Tomatoes, sliced thin, salted, and well-drained on paper towels for 30 minutes
4 Provolone cheese slices
4 garlic cloves
1 cup Mozzarella cheese, shredded
1/2 cup Mayonnaise
1/2 cup Parmesan cheese, grated
Pepper
Paprika

Fresh Basil for garnish

Peel and slice tomatoes. Place on paper towels and liberally salt. When finished draining, blot the tops of the tomatoes.

Preheat oven to 450 degrees. Prick pie crust and cook in oven for 10 minutes. Allow to cool slightly.

Layer the provolone cheese on the bottom of the pie crust. Next, layer the well-drained tomatoes in the pan. Sprinkle the garlic evenly over the top.

Mix the mayonnaise, mozzarella, and Parmesan cheese. Spread over the top of the pie. Sprinkle pepper and paprika over the pie.

Bake at 375 degrees for 40 minutes.

Garnish with fresh basil.

Optional: add cooked bacon over the tomatoes.
