½ cup butter
1 cup sugar
1 egg
1 tsp. vanilla
4 smashed large bananas
¼ tsp. baking soda
¼ tsp. salt
¼ tsp. baking powder
2 cups Pamela's Gluten-Free Baking and Pancake Mix
1 cup chocolate chips

Directions:
Directions:
Cream butter and sugar. Add egg and vanilla, beat for 2 minutes. Stir in bananas.

Mix baking soda, baking powder, salt and baking mix together. Stir flour mixture into wet mix. Be careful not to over-stir the batter. Add chocolate chips if desired.

Put one small spray of cooking spray into 2 non-stick loaf pans and smooth it around with a paper towel so it has a very light coating on it.

Immediately place mixture in the 2 loaf pans, divided evenly. Immediately put the loaf pans into pre-heated 350 degree oven for 30-35 minutes or until top is golden brown.

Remove from oven and put on a rack until bread is totally cooled. If you try and remove the bread from the pan while still hot, it will crumble
