1 lb ground beef (or spicy sausage for extra kick)
8 oz cream cheese, softened
1 can (10 oz) Rotel tomatoes with green chilies (drained slightly)
1 can (15 oz) corn kernels, drained
1 can (15 oz) black beans, drained and rinsed
1 cups shredded cheddar cheese
1 cup pepper jack
1 packet taco seasoning
2–3 green onions, chopped (optional garnish)
Fresh cilantro, chopped (optional)

Cook the meat Brown the ground beef (or sausage) in a skillet until fully cooked. Drain excess grease.

Season it Stir in taco seasoning and mix well.

Mix the dip In a large oven-safe dish or slow cooker, combine: cooked meat, cream cheese, Rotel, corn, black beans, and 1˝ cups shredded cheese.

Bake or melt
• Oven method: Bake at 350°F for 20–25 minutes until hot and bubbly.
• Slow cooker method: Cook on low for 1˝–2 hours, stirring occasionally.

Top and serve

Sprinkle with the remaining cheese, green onions, and cilantro before serving.

Serve hot with tortilla chips, Fritos scoops, or even fresh veggies
