2 lb. can of Bruce's Sweet Potatoes
1/2 c. sugar
Pinch of salt
1/2 tsp. cinnamon
1 T. pure vanilla extract
2 eggs
1 T. flour
1/2 stick butter (1/4 c.)

Topping:
1/2 c. chopped pecans
1/2 c. brown sugar
1/4 stick of butter (2 T.)

Directions:
Boil sweet potatoes in their own can juice until juice is almost gone. Mix remaining ingredients in a glass bowl until thoroughly blended. Pour mixture into an 8"x13" glass baking dish. Put boiled (cut up) potatoes on top of blended ingredients (or vise versa). Sprinkle topping over the top. Bake covered approximately 40 minutes at 325º (don't let it dry out. Add milk if needed).

This recipe was given to me by my 85 year old friend, Miriam Lancaster, in 1992. Miriam said it was her cousin's own recipe. We have made it in our home many times over the years, especially for Thanksgiving and Christmas dinners, and it is really delicious. We never have left overs! So good with turkey and dressing, green bean casserole, and cranberry sauce!

To be honest, I love to increase the amount of pecans!
