Directions:The Galloping Gourmet was a British television chef, Graham Kerr, who became famous in the late 60's and early 70's. This is my personal version of his stuffed baked potato recipe.
Wash, scrub and thoroughly salt the outside of the potatoes. Bake at 400º for about 60 minutes (based on the size of your potatoes). Remove from oven and cut in half with a sharp knife. Melt butter in a large saucepan. Scoop out potato from the crusty, stiff skins and place potato meat in the sauce pan. Stir until potato is thoroughly covered with the melted butter. Add diced tomatoes to the potato in the sauce pan. Stir and mix. Don't over stir; you want the chunks to stay fairly firm. Stir in the chopped chives. Add the nutmeg to the mixture and stir throughout. Salt mixture to taste and stir thoroughly. Restuff potato shells, filling them up nice and full. Serve hot.
You should have a really nice nutmeg flavor with the tomato, chives, butter and salt! Delicious! |

Notes: I fell in love with this recipe in 1970 and have made it so many times I can't count them all! I love the unique flavor of the tomato with the nutmeg, chives, salt and butter mixed into a baked potato. Graham Kerr had many great recipes, and I never had an official copy of this one - just my own handwritten notes while watching him make it on television.
