5 1/2 ounces manicotti pasta = 12 shells

FOR THE FILLING:
1 pound of spicy elk sausage
1/2 cup onion finely chopped
2 teaspoons minced garlic
15 ounces ricotta cheese
1 egg
1 cup shredded mozzarella cheese
1/2 cup parmesan cheese
3/4 teaspoons italian seasoning
Salt and pepper to taste

FOR ASSEMBLY:
2 1/2 cups RAO'S Caramelized onion sance
12 manicotti shells
1 1/2 cups mozzarella cheese
2 tablespoons basil

Directions:
Directions:
Preheat oven to 350°
Coat a 9x13" baking dish with oil

Heat the oil in a pan to cook sausage. Add onions. cook for 4-5 min or until onions are softened and sausage is browned and cooked.
• Add garlic cloves and cook for an additional 60 seconds. Remove from heat.

Place the ricotta cheese, egg, mozzarella, parmesan, italian seasoning and salt and pepper in a large bowl. Stir to combine.
Add in the meat mixture. Stir

• Cook the manicotti in salted boiling water for 1-2 min. (less than the package directions).
Drain and cool slightly. (They can stick and tear)

Spread 1 cup of your sauce over the bottom of pan.

Use a spoon or piping bag to fill each manicotti.

Arrange in a single layer and pour remaining sauce .
Cover and bake for 20 min.

Uncover, sprinkle the mozzarella and bake for 10-15 min. Enjoy!
