1 head cauliflower, trimmed and separated into florets
1 red pepper, sliced into bite-size strips
2-4 T. pine nuts
3 T. olive oil (less if you prefer)
salt and pepper

Directions:
Directions:
Heat oven to 400°. Put cauliflower, peppers and pine nuts on a baking sheet with low sides and drizzle with oil, sprinkle with salt & pepper, and toss to distribute.
Roast until cauliflower is softened and browned, approx 25 minutes.
Serve.

Variation: To make this a salad, drizzle with balsamic or sherry vinegar (2 T. or to taste) and serve hot or at room temperature.
