- Jacard (tenderizer with knives) the meat lots.

- cover with olive oil, salt & fresh cracked pepper.

- let set in fridge for at least a few hours.

- let stand on counter until meat is at room temperature (about an hour).

- have smoker stabilized at 150°.

- smoke for 90 minutes.

- raise temperature to 275°.

- Cook until internal temp is 140°.

- Take off smoker and wrap in foil and rest for 10 minutes.

- Slice 1/4” or less strips cutting across the grain.
